Raw Coconut & Lime Cheesecake

 


Base

1 cup Medjool Dates (pitted, soaked and drained)

1/2 cup caramelised buckinis

1/2 cup fine coconut

2tbsps coconut oil

pinch of Himalayan salt

 

Filling

2 1/2 cuprs Raw unsalted cashews (soaked and drained)

1/4 cup desicated coconut

1 lime (1/4 cup juice)

1/4 cup coconut water

1/4 cup coconut oil

3 1/2 tbsps Rice Malt Syrup

 

Method

Blend base ingredients in a high speed blender. Press mix firmly into a tray.  Blend filling ingredients and then pour on top of the base mix.  Sprinkle with coconut flakes and lime zest. Place in freezer until set.
